Altitude affects pressure cooker recipes because water boils at a lower temperature as elevation rises. Even under pressure, food may need longer to soften properly. That is why beans, grains, meat, and potatoes can turn out undercooked at higher elevations. A useful correction is to add about 5% cooking time for every 1,000 feet above 2,000 feet. For example, a 20-minute recipe at 5,000 feet may need around 23 minutes. This guide explains how altitude changes pressure cooker recipes and why timing adjustments matter.
