To fix an over-seasoned wok that has gone sticky, stop adding more oil. Sticky seasoning usually means the oil layer was too thick or not heated enough to cure properly. Wash the wok with hot water, a little dish soap, and a sponge or brush to remove the gummy layer. Use coarse salt for stubborn patches. Dry the wok fully over heat, then apply a tiny amount of high-smoke-point oil and wipe almost all of it off. Heat until the surface smokes lightly and dries. Thin layers create better seasoning.
