The reason sauté pans need a helper handle is weight and control. A sauté pan has straight sides and more capacity than a regular frying pan, so it becomes heavy once filled with food, oil, sauce, or stock. A helper handle lets you lift the pan with both hands, making it safer to move, pour, drain, or transfer from hob to oven. Small sauté pans may be manageable without one, but medium and large pans benefit from the extra support. It reduces wrist strain and gives better control when the pan is full.
